Coconut Sticky Rice in Banana Leaves
Prepare: 1 cup sticky rice, 1 cup fresh coconut milk, 1/3 cup sugar, 1 plantain sliced, 1 package banana leaves. Take one cup of Lao sticky rice. Rinse and drain several times in cold water to remove debris. Add cold water to cover sticky rice. Let sticky rice soak in cold water overnight or for at least 4 hours. Place a saucepan over medium heat. Add fresh coconut milk and sugar into saucepan. Stir rice until coconut milk is absorbed. Take the banana leaf and add rice into banana leaf and fold it. Place the steaming pot on a stove element set to high heat. Place steaming basket into steaming pot.

Bake the rice in the preheated oven until golden, about 15 minutes. Remove and allow to cool. Once cooled, grind into a fine powder with a spice grinder. Meanwhile, grind the chicken thigh meat in a food processor until finely ground. Heat the peanut oil in a wok or large skillet over medium heat. Stir in the garlic, chili peppers, and green onions. Add the ground chicken thigh meat, and cook. Season with fish sauce, shrimp paste, and sugar. Stir in the ground rice, mint, basil, and lime juice to serve. Chicken Fried Rice
Fry the chicken, add a couple of dashes of soy sauce, garlic, and let it fry until cooked. Cook the jasmine rice until done. Place rice to a frying pan, add a little oil so the rice wont stick, then add 1/2 cup of water, fish sauce, soy sauce and a teaspoon of sugar. Fry on medium heat for about 5 minutes. Add chopped red peppers for spice, 2 eggs to the side to cook. Once egg almost done stir the egg around the rice so it will look almost like scrambled eggs.

In large pot, add oil, garlic spring onions, fennel seeds, cayenne pepper, cinnamon and peanuts. Add coconut milk and rice. Cook 15 minutes on low. You may add mushrooms instead of rice. Stir a few times during cooking. Add cooked chicken.

Combine coconut milk, red curry paste, sugar, salt and grated coconut; add the rice and mix well into small balls. Dip the balls into the egg the deep fry until golden brown. Break the balls apart into a clean bowl and gently stir. Add the shallots, season with fish sauce and a little lime. Return the reserved crusts to the deep fryer until crispy crumble them onto the rice mixture or serve on the side.
